Camarero y Cangrejo is an affectionate portrait—a distillation of many idly enjoyed observations in Spain’s innumerable cafes, bars and restaurants nestling at the heart of the Spanish way of life.

The waiter in this painting is a man of confidence and long experience. He is nimble of foot and dexterous. He pours with elegance, turns with style and converses with his clientele with a knowledgeable ease. While evolving work schedules, gentrification and the global homogenization of gastronomy nibble away at tradition, it is hoped that the role of the ‘camarero’ remains intrinsically woven into the cultural fabric of Spain.
